Agimat Foraging Bar And Kitchen: An Enchanting Gourmet Paradise
Enter a realm of enchantment and timeless folklore as you step foot in Agimat Foraging Bar & Kitchen—a recently-opened bar and restaurant in Poblacion you wouldn’t want to just pass by. Just the sight of it already exudes a promising experience as it is located on the second floor of a somewhat ancestral house preserved by time.
Surrounded in spellbook drawings on the walls along with antique decorations, Agimat was able to incorporate alchemy and nature in every corner which is especially heightened by the magnificent Balete tree just behind the bar. To further strengthen Agimat’s concept and authenticity, fusions and mixtures of different herbs and spices are stored in big jars stationed in the bar instead of fancy beer and wine bottles.
Prepare to be indulged in Filipino culture within a gourmet paradise through a selection of exquisite cuisines served with tales and passion. Agimat prides itself with ingredients, both known and unknown, from a chosen island or province in the Philippines. This month’s featured destination? Batangas. Everything–from the dishes to their drink concoctions–is local which aims to teach the Filipinos how to be Filipino. What’s more is that they practice zero-waste food preparation.
Agimat has an overwhelming list in their menu but we were lucky enough to try a few of their signature cuisines.
ITIK; DUCK
The dish is a free-range duck leg confit with an essence of pianggeng. The itik is a local find from Batangas which is fused with coconut flavor, cassoulet of adlai, Ilocos heirloom tomato, santol duck jus, pinuneg and kinuday along with lemongrass and ginger for the aromatics.
MOLLUSCO; SHELLFISH
Inspired from a different kind of seashell found in Calatagan, Batangas, this aesthetically pleasing and satisfying dish consists of what you can find under the sea—salungo, tahong, diwal, kapis uni emulsion, smoked mussels, scallops, grilled angel wings. The Mollusco is prepared with a dry ice smoke effect which mirrors the waves and atmosphere of the sea. Moving on to their cocktails, Agimat goes beyond expectations by having connected themes and stories with their drinks. Their cocktail selection is divided into 5 elements: Apoy (fire), Tubig (water), Lupa (earth), Hangin (air), and Buhay (life). Each of the elements has something to do with the cocktails.
LIMANG MANDIRIGMA
This majestic cocktail–both in flavors and preparation–has five vibrant shots contained in glass vials. Each shot has its own characteristic which is concocted from various floral extracts, syrups, spices, and their own secret recipes. From strong, spicy, fruity, citrus, and refreshing, you can say that the drinks are an adventure itself.
GAYUMA NG PARAISO
Categorized under the element of water, Gayuma ng Paraiso is undoubtedly one of the most alluring drink on the list. The drink is a pleasant fuse of dalandan liquor, white rum, guyabano ginger shrub, lime, mint, and blue pea spritz while being surrounded by rose petals and slices of lime. Head on to Agimat every Wednesday to witness their weekly Plaka Nights where music is played through a vinyl record.
